Blueberries get their brilliant color...and a great portion of their powerful antioxidant properties...from a flavonoid called anthocyanin. They contain other antioxidants as well: they are high in vitamin C and have small amounts of resveratrol. It sounds kinda crazy, but there was a study showing people extracted more nutrients from blueberries when eaten while mindful of the health benefits. Cool huh? Try meditating on that while you try out this delicious ice cream.
1 organic banana, peeled and frozen
2 cups frozen organic blueberries
2 tbsp organic almond milk
Place the frozen banana and blueberries in your food processor and blend until smooth, scraping the sides.
With the processor running, add the almond milk.
Serve and eat immediately.
Makes 2 servings.
