These pancakes are naturally sweetened by bananas, which means the sugar is balanced by fiber. They each contain more than 2 grams of protein...wow!...which further balances out the sugar content.
2 overripe organic bananas, mashed
1/2 tsp sea salt
1 tsp cinnamon
2 pasture raised organic eggs
5 tbsp organic rolled oats
1/2 cup walnuts, finely chopped
1-2 tbsp organic virgin coconut oil
Using a large fork, mash the bananas in a metal bowl.
Add the sea salt and cinnamon.
Use the folk to “whisk” in the eggs.
Mix in the oats.
Melt the coconut oil in a stainless pan over medium low heat.
Spoon the mixture into 6 portions, about 2 tbsp each. This may require 2 batches.
Cook over medium to low heat for 4 minutes each side.
Makes 6 pancakes.
