Flourless Banana Walnut Pancakes



These pancakes are naturally sweetened by bananas, which means the sugar is balanced by fiber. They each contain more than 2 grams of protein...wow!...which further balances out the sugar content.


Ingredients:

  • 2 overripe organic bananas, mashed

  • 1/2 tsp sea salt

  • 1 tsp cinnamon

  • 2 pasture raised organic eggs

  • 5 tbsp organic rolled oats

  • 1/2 cup walnuts, finely chopped

  • 1-2 tbsp organic virgin coconut oil


Instructions:

  1. Using a large fork, mash the bananas in a metal bowl.

  2. Add the sea salt and cinnamon.

  3. Use the folk to “whisk” in the eggs.

  4. Mix in the oats.

  5. Melt the coconut oil in a stainless pan over medium low heat.

  6. Spoon the mixture into 6 portions, about 2 tbsp each. This may require 2 batches.

  7. Cook over medium to low heat for 4 minutes each side.

Makes 6 pancakes.
