Green Beans With Almonds and Garlic

Green beans contain vital nutrients to boost your energy and your immune system, such as iron, vitamin K1, vitamin C and other antioxidants, folate, and magnesium⁠. They also contain the carotenoids lutein and zeaxanthin which are essential for the health of your eyes. To get the most nutritional benefits from your green beans, eat them fresh and don't overcook them.


Ingredients

  • 1 lb. fresh organic green beans, stems removed

  • 1 tsp organic virgin coconut oil

  • 1 ½ tbsp plus 1 tbsp high polyphenol organic EVOO

  • ¼ cup chopped organic almonds

  • 2 cloves garlic, minced and rested for 5 minutes [if you love garlic, add more!]

  • Juice of 1 lemon

  • 1/4 tsp plus 1 pinch sea salt

  • freshly ground black pepper to taste


Instructions

  1. Steam beans until al dente [cooked but still slightly crispy]. Set aside.

  2. Melt the coconut oil in a skillet.

  3. Add the almonds, and saute until golden, stirring constantly.

  4. Sprinkle the nuts with a pinch of sea salt, then remove from the pan and set aside.

  5. Using the same skillet, saute garlic in 1 tbsp EVOO at low heat until fragrant, about 30-60 seconds. Remove from the heat.

  6. In a large bowl, combine the lemon juice, ¼ tsp sea salt, and pepper.

  7. Add the garlic and any remaining EVOO from the pan.

  8. Add 1 ½ tbsp EVOO to the lemon juice mixture and whisk to emulsify.

  9. Add the beans to the dressing and toss to coat.

  10. Sprinkle with roasted almonds, and serve warm or cool.
