Harissa Roasted Cauliflower



Cauliflower is not only a great source of fiber, antioxidants, and detoxifying substances your body needs, but it also contains choline. Why does this excite me? Choline is needed for healthy cell membranes, making DNA, brain development, and production of neurotransmitters [think "happy hormones".]


Have you ever tried the amazing charred cauliflower dish at True Food Kitchen? My husband and I had it several years ago, and I immediately went to the store to try my hand at recreation.



Ingredients

  • 1 large head [or 2 smaller heads] organic cauliflower, cut into florets

  • 2 tbsp organic EVOO

  • 1 tsp sea salt

  • ¼ cup organic roasted red pepper

  • ½ tsp red pepper flakes, ground

  • ¼ tsp smoked paprika

  • 3 cloves garlic

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 lemon, juiced

  • 3 tbsp organic tahini

  • 2 tbsp mint, chopped

  • ¼ cup dill, chopped

  • ¼ cup pistachios, chopped

  • 2 dates, chopped


Instructions

  1. Place cauliflower on a roasting pan, drizzle with EVOO, then sprinkle with 1/2 tsp sea salt.

  2. Place the tray on the middle oven rack, and cook on broil for 30 minutes, turning pieces twice.

  3. Meanwhile, blend the red pepper, ground pepper flakes, garlic, cumin, coriander, and ½ tsp sea salt in your food processor. Add lemon juice and tahini and blend until mostly smooth.

  4. Please the roasted cauliflower in a large mixing bowl, add the sauce, and toss to coat.

  5. Gently mix in the mint, dill, pistachios, and dates.
