Lemon Chia Pudding





I could tell you all the great reasons to eat chia seeds, but since I bet you already know, I'm going to tell you why you should enjoy the whole lemon. Sure the juice is wonderful and packed with vitamins, but did you know that the peels and internal membranes are packed with healthy fiber, vitamins, minerals, and calcium? Lemon peels are anti-inflammatory, and studies show they improve vascular health and lower high blood pressure. This recipe is a fun way to use the whole lemon! Try it for breakfast or as a dessert.


Ingredients:


  • 1 organic lemon, juiced, about ¼ cup

  • 2 organic lemon halves, seeds removed, finely chopped in food processor

  • 3 tbsp organic real maple syrup

  • ½ tsp sea salt

  • ⅔ cup canned organic coconut milk, emulsified solids and liquid portions

  • 1 cup organic almond milk

  • ¼ tsp vanilla

  • ¼ cup organic chia seeds


Instructions:


  1. Mix all ingredients, except chia seeds, in a medium saucepan.

  2. On medium heat, bring to near boiling, stirring constantly, then remove from the heat.

  3. Add chia seeds.

  4. Refrigerate 6 hours or overnight, stir well, then serve or store in a lidded glass container.
