Don't underestimate the humble but versatile rutabaga. I mean...HELLO fries that were devoured immediately after exit from the oven! This root veggie is packed with healthy fiber, magnesium, potassium, and large amounts of immune-boosting vitamin C! These pair well with many sauces and pestos.
1 large rutabaga, peeled, and cut into ½ inch spears
1 tbsp organic virgin coconut oil
⅛ tsp freshly ground black pepper
½ tsp salt
½ tsp organic smoked paprika
½ tsp cumin
⅛ tsp organic harissa powder
Preheat oven to 400 degrees F.
Melt coconut oil on a baking sheet.
Add the rutabaga spears and coat thoroughly.
Mix together the remaining ingredients then sprinkle over the fries.
Bake on the bottom oven rack for about 30 minutes, turning 2-3 times.
