Apple Blueberry Compote

This quick and easy dessert is packed with antioxidants and fiber!


6 organic granny smith apples (unpeeled), cored, and cut into chunks 1 10 oz bag organic frozen blueberries 2 cups filtered water 2-3 Tbsp organic kudzu root, dissolved in an additional 1⁄2 cup cool water 1/2 tsp sea salt 1 tsp organic cinnamon, or to taste 6 drops organic liquid stevia, optional [I prefer to not add sweetener] Roasted organic pepitas to garnish


Place apples in saucepan with filtered water, salt, and cinnamon. Bring to a boil then turn down the heat and simmer until starting to soften. Add frozen blueberries and bring back to a boil.

Remove from heat and add dissolved kudzu root and stir until mixture thickens.

Allow to cool. The compote is delicious served warm or cool.
